2 cups cooked whole wheat couscous
1 cup chopped cucumber
1 cup chopped tomatoes
1/8 cup chopped red onion
1 cup canned garbanzo beans, drained
1.4 cup fresh mint
2 lemons, juiced
1 tbsp olive oil
Salt and pepper to taste

Wisk together lemon juice and olive oil.
In separate bowl combine all other ingredients and mix.
Pour olive oil and lemon juice mixture over ingredients and stir well.
Cover and refrigerate for 2 hours.
