3 lbs. medium potatoes
|
|
3 leeks, chopped (6 c.)
|
|
6 T. butter (can omit)
|
|
6-8 c. chicken broth
|
|
1 c. half-and-half
|
|
Salt, pepper, chives, sour cream to garnish
|

Instructions |
|
|
Peel and cube potatoes.
|
|
|
Wash, trim and chop leeks, using as much of green tops as possible.
Melt butter, then add leeks, cooking until wilted.
|
|
|
Add potatoes and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 20 minutes.
|
|
|
Add half-and-half and heat through before serving.
|
