     Hush Puppies

Ingredients
1 box Jiffy cornbread mix
1/2 c. grated onions
5 Tbsp. buttermilk or 2 Tbsp. skim milk
1/4 tsp. baking soda
1 egg, slightly beaten
2 Tbsp. sugar
3 Tbsp. self-rising flour
1 tsp. salt
1 tsp. pepper
 
2 slices white bread, crumbled
2 Tbsp. grated green bell peppers (optional)

Instructions
Mix all ingredients together just until wet. Refrigerate 30 minutes to 5 hours.
To cook, heat oil to about 350-375 degrees. Dip a small spoon in cold water, then get a spoonful of batter. Immediately submerge spoon in the hot oil for a few seconds until the hush puppy releases from the spoon. Repeat until you have 6-7 in the hot oil. Do not crowd the puppies. Cook until golden on the outside and cooked on the inside. Give the puppies a nudge if needed to cook evenly on both sides.
Oil is too hot or puppies are too big if they are brown on the outside and runny on the inside.
