     Hegele Homemade Bread

Ingredients
3 1/2 cups hottest tap water (around 105 degrees)
4 cups white flour (heaped)
3 tbsp yeast
1/3 cup oil
1/3 cup honey
1 1/2 tbsp lemon juice
1 tbsp salt
4-5 cups wheat flour
 

Instructions
In mixer add 4 cups flour, yeast, then hot water. Mix lightly. Cover with towel and let sit for 10 minutes (this is sponging and helps activate yeast) Then add oil, honey,salt and lemon juice. While it is mixing, gradually add 4-5 cups wheat flour until dough leaves side of bowl. Knead 7 minutes. Oil counter surface and hands. Shape dough into 3 loaves. Put in greased bread pans. Spray tops of loaves with nonstick spray. Warm oven at 200 for 2 minutes, then turn off. Let bread rise in oven 40 minutes or until double in size. Bake at 350 degrees for 25 minutes. Remove from pans immediately and place on cooling rack. Spritz tops of loaves with water. This helps seal in the moisture while letting heat out. Cool before cutting.
Note- You can alter the amount of wheat and white flour to your taste. When using all wheat flour, it helps to add 3-4 tbsp 'vital wheat gluten' which makes it less dense and adds elasticity.
