     Carrot Cake

1 C flour
1 tsp baking powder
1/2 tsp mixed spice
1 C caster sugar
2 eggs
1 tsp vanilla
3/4 C vegetable oil
1 1/2 C grated carrot
1/2 C chopped walnuts (optional)
30g butter
30g cream cheese
1 1/2 C icing sugar

Preheat oven to 150-160. Grease and line a 20cm square cake tin.
Sift dry ingredients. Add eggs, vanilla and oil. Mix well till light. Add carrots and walnuts.
Cook 40-45 minutes. Cool and ice.
ICING- Melt butter and cream cheese. Mix in icing sugar.
