     Chicken Tortilla Soup

10 boneless, skinless chicken breasts
1 large onion, chopped
4-6 cups water, with chicken bouillon
1 stewed tomato
2 cans diced Rotell tomatoes and chillies
1 teaspoon garlic powder
1 large box velveeta
tortilla strips
sour cream for topping

Boil chicken in water for 20 minutes and add salt. Drain water, remove chicken and dice. Rinse pan. Add water and bouillon (saving 1/3 as reserve). Add cubed chicken, onion, and peppers- boil for 10 minutes. Add spices and rotell tomatoes- boil for 20 minutes.
Cook on low/medium heat for 1 hour, stir in diced velveeta. Add in reserve of water, cook for 20 minutes. Add sour cream and tortilla strips.
