     Salmon with Fennel, Citrus and Chiles

Ingredients
fennell - 1 medium thinly sliced
orange - 1 blood or navel very thinly sliced seeds removed
lemon - 1 meyer or regular thinly sliced seeds removed
chile Fresno or jalapeno - thinly sliced
dill - 4 sprigs
salt - Maldon
salmon - 2 lbs fillet
olive oil - 3/4 cups
 

Instructions
Preheat oven to 275F. Toss fennel, orange slices, lemon slices, chile and 4 dill sprigs in a shallow 3 qt baking dish. season with salt and pepper. Season salmon with Maldon salt and place on top of fennel mixture. Then pour olive oil over salmon. Roast until salmon is cooked 30-40 minutes.
