     Crab Cakes

2 tsp. olive oil
2 scallions, sliced thinly
bell pepper
jalapeno pepper
1 tbsp ginger, gratd
1 lb. crab meat
1 tsp. lime zest
2 tbs. fresh lime juice
1/4 cup chopped cilantro
1 large egg
1 cup panleo bread crumbs
3 tbsp. olive oil/mayo recipe
1/2 tsp. salt
1/3 cup non-fat greek yogurt
1 tsp. hot chili garlic sauce

Preheat oven to 425 degrees F. Grease baking sheet. On medium heat add oil, scallions, peppers, jalapenos until soft, add ginger and garlic then set aside. In a large bowl combine pepper mixture with crab meat, zest, lime juice, cilantro, egg, 1/2 c panleo, mayo and salt. In remaining panleo, rolled cakes gently then place on baking sheet. Lightly coat cakes with oil. Bake for 10 mins. Check then for 10 min more and add mayo ontop.
