Ingredients
1 cup besan
2 cups oil/ghee/butter
3 cups sugar
Cardamom / chopped almonds / chopped pista for decoration
 

Instructions
1. Put in the sugar in a pan which is broad and thick. Pour enough water to just soak the sugar. Let it boil on medium flame till one string consistency – it’s the longest part of the procedure. It took me more than 15 minutes to get past this stage. 2. It’s pretty easy and took less than 5 minutes after that. Pour besan slowly into the sugar syrup while stirring constantly.
3. Once it starts frothing and about to get thickened, pour the oil /butter/ghee/mix of them and stir further continuously till it thickens enough. 4. The last step is most difficult because if the stove is put on sim, the batter gets dried and doesn’t come out soft enough. If it is in medium or high, there is a danger of burning the batter. That is why a thick vessel is needed.
5. Grease a tray and pour the batter onto it. Sprinkle some sugar on top if desired. 6. Let it cool down completely before cutting into pieces and serving.
