Cream oil,sugar,eggs and vanilla with mixer. Add
remaining ingredients by hand into creamed mixture.
Batter will be very stiff. Add 2 cups peeled,
chopped cooking apples and 1 cup chopped pecans. Mix
well and bake in 9x13 sprayed pan at 350 for 45
minutes. Cool cake.
Beat icing ingredients with electric mixer. Spread
icing on cooled cake.
