In a nonstick pan heat 1 tsp of oil. Mix 2 tbs vinegar, mustard,garlic, and chicken in a bowl. Turn chicken to coat.
Transfer chicken and marinade to pan and cooke chicken thoroughly. Transfer chicken to platter and keep warm
Heat remaining oil in the pan. Saute mushrooms for a minute. Add broth, thyme, and remaining vinegar. Cook, stirring occasionally, until mushrooms are a deep brown, about 2 more minutes
