Preheat oven to 350. Prepare cake according to the directions. spray two 9" round pans with nonstick spray. Bake cakes until a toothpick comes out clean, about 25 minutes. Cook completely on wire racks.

Reserve some strawberries for garnish. Slice remaining strawberries; place in a bowl. Sprinkle with the regular sugar. Mash slightly with a potato masher. Chill until ready to assemble cake.

Beat whipping cream until stiff peaks form. Add confectioner's sugar and vanilla just until mixed.

|
Place 1 cake layer on serving plate. Cover with mashed strawberries. Top with about 1 1/2 cups of whipped cream. Place second cake layer on top. Spread the remaining whipped cream on top and garnish with the reserved strawberries
