3 lbs tomatoes

1 large Anaheim green chiles (5-6 chiles)

3 jalapeno chiles, seeded, stems removed, chpd

1 1/2 c chopped onion
|

3 cloves garlic, minced
|
|
1 c apple cider vinegar
|
|
1/2 c loosely packed chppd cilantro (incl stems)
|

1/2 t cumin
|
|
2 t salt
|
|
|
|
1-2 t sugar
|
|
5-6 pint-size canning jars
|

(or substitute canned green chiles)

Instructions |
|
|
Roast the chiles over a gas flame on the stovetop, rub off their
skins, and chop (Do ot use more than 1 1/2 c chopped chiles)
|

Prepare tomatoes. blanch, peel. Use between 7-8 cups chopped
tomatoes and juices.
|
|
|
Put all ingredients into a large pot. Heat to boiling, then reduce to
a simmer. Cook uncovered for about 10 minutes.
