     Salsa-for canning

Ingredients
3 lbs tomatoes
1 large Anaheim green chiles (5-6 chiles)
3 jalapeno chiles, seeded, stems removed, chpd
1 1/2 c chopped onion
3 cloves garlic, minced
1 c apple cider vinegar
1/2 c loosely packed chppd cilantro (incl stems)
1/2 t cumin
2 t salt
 
1-2 t sugar
5-6 pint-size canning jars
(or substitute canned green chiles)

Instructions
Roast the chiles over a gas flame on the stovetop, rub off their skins, and chop (Do ot use more than 1 1/2 c chopped chiles)
Prepare tomatoes. blanch, peel. Use between 7-8 cups chopped tomatoes and juices.
Put all ingredients into a large pot. Heat to boiling, then reduce to a simmer. Cook uncovered for about 10 minutes.
Can the salsa.
