     Cauliflower with peas

Ingredients
2 T canola oil
1 t cumin seeds
1 t freshly grated ginger
1/2 t minced garlic (1 clove)
4 shallots, peeled and sliced
1 small head cauliflower, in florets
1 c frozen peas
1/2 c grape tomatoes, halved
1 t ground turmeric
 
1/2 t black pepper
2 T ground coriander
1/4-1/2 t cayenne (optional)
cilantro for garnish

Instructions
Heat oil in a skillet. Add cumin seeds, saute 30 seconds. Add ginger, garlic, and shallots. Cook for 2 minutes. Add cauliflower, cover, and cook, stirring occasionally, until carmelized, about 8 minutes.
Add peas and tomatoes. Stir in turmeric, black pepper, coriander, and cayenne. Salt to taste. Cook for 2-3 more minutes.
Cover and cook for 5-7 more minutes. Garnish with cilantro.
Serving Suggestions
cauliflower could be replaced with 3-4 c brussels sprouts, cubed potatoes, diced chicken, or extra firm tofu
