Add peas to boiling salted water. Return to boil. Cook 1
minute. Drain and rinse with cold water.
Drain well, and then put in food processor with olive oil,
garlic, Parmesan, lemon juice, salt, and pepper.
cover and process until smooth. Stir in mint.
store covered, refrigerated up to 3 days; frozen up to 3
months.
