     Seven Layer Sausage Casserole

Ingredients
8 breakfast sausages
1 onion
1/4 cup uncooked rice
2 large potatoes, sliced
2 small carrots, sliced
250 g frozen peas
440 g can tomatoe soup
1 cup water
1/2 cup grated cheese
 

Instructions
Preheat oven to 350 F.
In a large casserole dish layer the potatoes, onion, carrots, uncooked rice and peas. Arrange sausages on top. Combine soup and water and pour over sausages. Cover and bake for 1 hour. Remove lid and bake for a further 15 minutes. Add Cheese on top and cook for 10 minutes more.
The casserole is cooked when the vegetables have soaked up most of the sauce and are tender, and the rice is cooked.
You can pre-cook the vegetables to reduce the overall cooking time.
