     Prime Rib Christmas 2013

Ingredients
1 prime rib roast
1/2 c kosher salt
1/4 c rosemary
1/4 c horseradish powder ???
1/4 c garlic powder
1/8 c cracked black pepper
 
Instructions
Combine seasonings and rub on roast. Let sit while oven is warming to 375. Place roast in broiler pan fat side up. Bake 45 min. Turn off the oven. DO NOT OPEN. One hour before serving turn oven on to 375 for 45 min. Take the roast out of the oven and let stand 15 min. Scrape off the salt mixture and carve.
I am more interested in the method than the recipe as I like my usual mix of dijon mustard and fresh garlic with fresh ground pepper and salt. We did try this and was a little over done but that being said we did not follow the directions. Next time will follow the cooking times to the letter and see if I get med rare.
