Potato, Sausage and Sweetcorn Chowder

1 tbsp olive oil
|

1 onion, peeled and finely chopped
|
|
1 clove garlic, crushed
|
|
450g/1lb floury potatoes, peeled and diced
|
|
1 x 227g reduced fat pork sausage, roughly chopped
|
|
500ml/18 fl oz semi-skimmed milk
|
|
500ml/18 fl oz chicken stock
|
|
200g/7 oz canned and drained or frozen sweetcorn
|
|
2 tbsp chopped fresh chives or parsley to garnish
|
|

Instructions |
|
|
Heat the oil in a large, heavy-based pan, add the onion and saute for 3 - 4 minutes. Add the garlic and potatoes and cook for 1 - 2 minutes.

Add the sausages, pour in the milk and the stock, then bring to the boil. Reduce the heat and simmer for 20 minutes, or until the potatoes are tender.
|
|
|
Stir in the sweetcorn and cook for 2 - 3 minutes.
|
|
|
Spoon the soup into warm bowls, sprinkle with the herbs and serve.
