     Green Chile Frittata

Ingredients
10 eggs, beaten
1/2 cup all-purpose flour
1 teas. baking powder
a pinch of salt
1 (7 oz.) can diced green chile peppers, drained
1 (16 oz) continer cottage cheese
1 cup shredded cheddar cheese
1/4 cup melted butter
1/2 cup diced ham
 
1/2 cup diced onion

Instructions
Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9X13-inch baking dish.
Dice onions and cook in butter until soft.
In a large bowl, mix eggs, flour, baking powder, and salt. Stir in green chile peppers cottage cheese, cheddar cheese, ham and cooled melted butter and onions. Pour into prepared baking dish.
Bake 15 minutes in preheated oven. Reduce heat to 325 degrees F (165 degrees C) and continue baking for 35 to 40 minutes. Cool slightly. Cut into small squares. Note: This recipe can easily be cut in half and baked in an 8X8-inch baking dish. Other ingredients like celery and/or bell pepper could be added.
Serving Suggestions
Serve with salsa and sour cream.
