     Salmon with a Tangy Thai Sauce

Ingredients
MARINADE-
1/2c rice vinegar (or white or apple cider vinegar)
1/4c honey
1Tb lemongrass, minced
2Tb soy sauce
1Tb fish sauce
4 cloves garlic, minced
1 fresh Thai chili, seeds removed and sliced (or 1/2 tsp cayenne pepper)
 
2 salmon fillets
1Tb EVOO or canola oil
Optional
1Tb fresh parsley, chopped

Instructions
MARINADE- Combine all ingredients in a saucepan over medium high heat, uncovered. Stir sauce as it boils. Reduce heat to medium and simmer for about 10 minutes. Place sauce in refrigerator or fridge to cool for about 5 minutes.
Place salmon fillets in casserole dish. When marinade has cooled to warm, spoon half of the marinade on salmon, slathering it on fish. Marinate in refrigerator for 10 minute up to overnight. Reserve remaining marinade.
Warm marinade if it is cold. Heat frying pan over medium high heat. When pan is hot, add oil and distribute evenly. Place fillet in pan. Allow salmon to cook for at least 2-3 minutes undisturbed. Flip salmon. Pour remaining marinade into pan so it thickens. Cook for another 1-2 minutes and then serve.
