Spray cooking spray on a large skillet, and heat over medium-low
heat. Add the egg substitute to the skillet. Gently lift cooked edges
and tilt the skillet in order for the liquid egg substitute to come
under the cooked portion. Continue cooking like this until all the
liquid portion of the egg is gone.
Carefully flip the cooked egg with a wide spatula. Put the basil,
diced tomatoes and feta cheese all over half of the omelet. Fold
omelet over and heat through. Now you have a tasty, healthy
breakfast waiting to be eaten!
