     Peppercorn Sauce

2 tbsp butter
1 cup thinly sliced onions
2 tsp crushed black peppercorns
1 cup thinly sliced green peppers
2 cups mushrooms, quartered
1 tsp minced garlic
1/2 cup beef stock
1 tbsp cornstarch
4 tbsp red wine
4 tbsp thinly sliced pimento
1 cup diced tomatoes
Sprinkle of finely chopped parsley

Melt butter over medium heat. When bubbling add onions and peppercorns. Stir til soft. Add green pepper, mushrooms and garlic. Sauté 1 minute while stirring. Add stock. Dissolve cornstarch in wine and add to pan. Bring to a boil. Immediately remove from heat. Add pimento, tomatoes and parsley. Return to boil and immediately reduce heat to simmer. Great with steaks.
