4 whole wheat tortillas (baked)

8 cups baby spinach
|
|
1/2 red onion, thinly sliced
|
|
1 medium cucumber, peeled and sliced
|
|
1/2 cup peeled, sliced carrots
|
|
1 cup cherry tomatoes
|
|
4 hard-boiled eggs, peeled and quartered
|
|
1/2 cup black olives, pitted
|
|
|
|
DRESSING
|
|
1/2 cup olive oil
|
|
2 tbsp lemon juice
|
|
1 garlic clove, finely chopped
|
|
Salt and pepper to taste

|
|
|
|
|
|

Instructions |
|
|
Combine spinach, red onion, cucumber, carrots and
tomatoes in large bowl and toss.
|
|
|
Separate into 4 bowls. Top with egg slices and
sprinkle with olives.
|

|
Whisk dressing ingredients together and add to salad
just before serving.
