     Stuffed Portobellos

Ingredients
4 large portobello mushrooms, stems removed
2 tsp soy sauce
3 slices whole grain bread
3/4 cup chopped walnuts
1 1/2 tsp Italian herbs
1 tsp olive oil
1T basil, chopped
salt and pepper to taste
 

Instructions
Rinse portobellos and pat dry. Put upside down on a rimmed cookie sheet. Drizzle soy sauce into each. Crumble bread and mix with the chopped walnuts. Add Italian herbs, olive oil, basil, and salt and pepper. Mix together, adding a little more olive oil if it seems dry. Spoon the mixture into the mushrooms and press down.
Make a tent of aluminum foil and bake at 375 for half an hour. Remove the foil and bake another ten minutes until mushrooms are tender.
Serving Suggestions
Great served with wild rice ( I like to add dried cranberries when I cook it) and steamed greens.
