     Spinach Artichoke Rollatinni

Ingredients
Cheese sauce...
4 tbl unsalted butter
1/4 C flour
4 C whole milk
1/4 tsp cayenne
1 C cheddar cheese,shredded
1 C shredded low moisture mozzerella
3/4 CC grated cheese
salt and pepper
 
FILLING....
2 tbl unsalted butter
1 10 oz box frozen chopped spinach,thaw and drain
1 9 oz box frozen artichoke hearts
1tsp worchestershire
salt and pepper
1/4 C grated cheese
1 large egg
ROLLATINNI lasagna,1C mozz,grated cheese

Instructions
Make the cheese sauce,melt butter in saucepan over medium heat, Whisk in flour and cook whisking 1 minute,gradually whisk in milk and cayenne until smooth, bring to a boil and cook until thickened about 2 minutes, removed from heat, add cheeses, salt and pepper . let cool to room temp
filling....melt the butter in a skillet over md heat. add spinach ,artichoke heats, worcestershire and 1/2 tsp salt... cook until vegetables are tender. transfer to a bowl and cool 30 minutes . season with salt and pepper, stir in parmesan, egg and 3/4 C cheese sauce.
Rollatini, Preheat oven to 350. Boil water and cook lasagna until pliable. Drain and rinse under cold water... Evenly spread 2 1/2 C of the cheese sauce in bottom of baking dish..Spread 2 tbl of spinach mixture on one end of noodle , roll and place seam side down on sauce, top with remaining sauce and cheeses. Cover with foil and bake until bubbly about 35 minutes...uncover and then broil 2-4 minutes. Let stand 10 min before serving
