     DESSERT Lemon Meringue Tart

Ingredients
2 cups water
2 lemons 2 tbs corn flour
1 cup sugar
2 eggs
1 tbs butter
Short Crust Pastry
 

Instructions
Place water, sugar, butter, rind & juice of lemons into saucepan, cook slowly Thicken with corn flour,pinch of salt & beaten egg yolks Boil five minutes, allow to cool Whip egg whites, add sugar beat until stiff Bake 150 deg for 10 minutes
