     Tex Mex Beef and potatoes

Ingredients
1 lb ground beef
1 medium red or green pepper chopped (1cup)
1 medium onion chopped (3/4) cup
1 pkg (1 1/4oz) Taco seasoning mix
1/2 cup water
4 cups frozen (cubed) Southern style hashbrowns
1 pkg (10oz) frozen corn
1/2 lb (8oz) Velveeta cheese cut up
 

Instructions
Preheat oven to 350 degres. Brown meat with peppers and onions in large skillet on medium-high heat sirring occasionally to break up the meat - drain. Return meat mixture to skillet.
Add taco seasoning and water; stir until well blended. Stir in potatoes, corn and Velveeta. Spoon into a 13x9 glass baking dish; cover with foil.
Bake 20 minutes. Uncover, stir gently. Bake uncovered an additional 15 minutes or until heated through.
