     Nut-n-special Quinoa

Ingredients
1 cup Quinoa
2 cups Water
2 tablespoons orange juice
2 tablespoons olive oil
2 tablespoons white balsamic vinegar
1 tablespoon Dijon or Honey mustard
1 teaspoon cumin
1 tablespoon fresh grated orange zest
Pinch of salt
 
1/4 toasted slivered almonds (I use a dry skillet to toast them)
1/4 cup dried cranberries
1 can mandarin oranges or fresh cubed segments of one orange

Instructions
Prepare 1 cup of Quinoa (I use the white not the red for this)(Bring 2 cups of water to a boil, add 1 cup of quinoa, reduce to a simmer, cover and allow to cook 15 minutes. Remove lid and stir, it may need a few more minutes cooking to dry it out - it should be the consistency of rice. Allow to cool about 10 minutes. To make the dressing mix juice, oil, vinegar (regular works fine but colors the quinoa), mustard, cumin, zest, and salt. Stir dressing into the quinoa and then add almonds, cranberries, and orange pieces. Can be served warm or cold.
