     Pickled Green Beans

Ingredients
Makes 4 pints
Peeled garlic cloves
Whole dried red chiles
Dill heads or dill seed
Pickling spice
2 1/2 cups water
2 1/2 cups white or cider vinegar
1/4 cup salt (not iodized)
Pint canning jars with lids and rings
 
2 pounds fresh green beans or 3 lbs fresh asparagus

Instructions
Wash jars in hot dishwasher or immerse in boiling water to clean them. Prepare vegetables by trimming the ends of the beans. If using asparagus trim the woody end so that spears will fit in the jars.
Put 1 clove of garlic, one half of a dried chile, 1 teaspoon of dill seed or 1 head of dill, 1/4th teaspoon pickling spice in the bottom of each jar. Then put cleaned and trimmed vegetables in the jars standing up.
Combine vinegar, water, and salt and bring to a boil. Pour over green beans up to 1/2 inch from the top. Wipe jar rims and put lids and rings on jars. Process in boiling water bath for 10 minutes.
Store in a cool dark place. Ready to eat in two weeks.
Serving Suggestions
Great for garnishing Bloody Marys or eating plain. You can also pickle okra this way.
