Season chicken with salt and pepper. Mix egg and milk. Dip chicken in egg mixture then breadcrumbs. Saute in canola oil until lightly browned. Put in oven dish
Melt butter in pan, whisk in flour and cook for minute or two. Add chicken broth, white wine, 1 cup pepperoncini juice from jar. Add two pepperoncinis cut in half to add heat.
Top cutlets with tomato and mozzarella, pour sauce over and bake covered 20 minutes. Until bubbly and cheese is melted.
