     Mango-Ginger Dipping Sauce

Ingredients
1 large ripe mango, cut to 1 inch cubes (about 1 cup)
1/4 c scallions, chopped
1 clove garlic
juice of 1/2 lime (about 2 tsp.)
1 - 2 tsp. ground ginger to taste
2T rice vinegar
2 tsp. agave syrup
1/4 tsp. salt
 

Instructions
Combine ingredients in food processor or blender and puree to smooth consistency.
Serving Suggestions
Serve as dipping sauce for Vietnamese spring rolls
