     Beer Can Chicken

Ingredients
1 chicken
1 can beer
Spice Rub-
2 T dried Italian seasoning
1 T lemon rind grated
3/4 tsp salt
3/4 tsp pepper
 

Instructions
Wash and dry chicken well. Sprinkle 2 tsp spice rub in cavity and neck. Rub 1 T on outside of bird. Cover and refrigerate for up to 24 hours.
Pour off 13 of can of beer. Put 5 more holes into the top of the can.Put remaining spice rub in the can. Place chicken on can. Set foil drip tray under one unlit burner of a 2 burner BBQ. Pour water into tray 1 inch deep. Heat other burner on med. Place chicken on unlit side of BBQ. Close lid and grill until juices run clear and bird temp is 185. 1 to 1 1/4 hrs.
Get bird off grill. Harder than it sounds......and cover with foil for 10 minremove and discard beer carefully. Serve with lemon wedges.
