toss pork with 1 T flour and S & P and set aside. In a lg skillet add 1/2 the oil and brown pork over med high heat in batches.Set aside.
Add remaining oil to pan saute onions peppers garlic thyme and paprika about 1 min.
Return pork to pan and any juices. add stock and bring to a boil. Mix remaining flour with 2 T flour and wisk in. cover and stir occasionaly until thickened and juices run clear about 5 min. Sprinkle with parsley. 8 carb 1 fiber
