     Roasted Winter Vegetables

Ingredients
2 sweet potatoes, cut into 1 inch thick slices, then fourths
1 head cauliflower, chunked
1 large onion, sliced thick
3/4 bag baby carrots
Kale, cut off stem and chopped approx 2 handfuls
Olive oil
Sea salt
Fresh black pepper
 

Instructions
In large bowl, mix all vegetables together. Drizzle heavily with olive oil. Season liberally with salt and pepper. Stir well.
Pour onto baking stone. Bake at 350 for approx 2 hours.
