2 sweet potatoes, cut into 1 inch thick slices, then fourths
|
|
1 head cauliflower, chunked
|
|
1 large onion, sliced thick
|
|
3/4 bag baby carrots
|
|
Kale, cut off stem and chopped approx 2 handfuls
|
|
Olive oil
|
|
Sea salt
|
|
Fresh black pepper
|
|

|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |

|
In large bowl, mix all vegetables together. Drizzle heavily with
olive oil. Season liberally with salt and pepper. Stir well.

Pour onto baking stone. Bake at 350 for approx 2 hours.
