     Tom Kha Gai (Coconut Soup)

Ingredients
3 to 4 Garlic Cloves chopped in half
1 Ginger Root cubed
1 Lemongrass Stalk chopped white end of stalk
1 quart Chicken Stock
3 Kaffir Leaves or basil if kaffir not accessible
2 1/2 cups boneless skinless chopped chicken
1 Red onion chopped
1 Bunch Cilantro chopped
2 Cans Coconut Milk
 
2 tbsp Fish Sauce ( Nam Pia)
1/1/2 tsp Sugar
2 Limes Squeezed
2 Thai Chilies or 1/2 tsp Red Curry Paste
1 lb of Mushroom Buttons

Instructions
In Stock pot simmer. Garlic, Ginger, Lemongrass and Kaffir Leaves for 1/2 hour. Strain out stalks and peels. Add chicken for 5 min till cooked. Add mushrooms and cook for 5 more minutes. Add Coconut Milk, Lime Juice,Fish sauce and Curry Paste or Thai chilies. simmer for 20 minutes. Add red onion. and sprinkle with Cilantro before serving.
