cook pasta according to package directions, drain
and set aside. meanwhile, for meatballs- stir
together finely chopped onion, minced garlic,
sweet basil rub, torn bread pieces or crushed
crackers, egg, and grated parmesan cheese. add
chicken and mix gently but thoroughly.
heat oil in skillet. using medium scoop, scoop meat
mixture into skillet. cook, uncovered, 7-9 minutes
or until golden brown. turning ocassionally. remove
meatballs from skillet when done.
to prepare sauce- add oil, finely chopped onion,
,minced garlic, and lemon juice to pan. cook until
onion is soft and translucent. add chicken stock
and wine, cook 2 minutes. stir in cheese, salt, and
sugar.
return meatballs to skillet. stir in pasta. cook,
covered, 2-3 minutes or until hot. top with chopped
parsley. 450 calories per serving.
