     Greek Quiche

Ingredients
1 9 pie crust
10 oz frozen spinach, thawed
12 eggs
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon dried oregano
6 oz of block feta
1-2 plum tomatoes
 

Instructions
1. Preheat oven to 350 degrees. Spray a 9 pie plate with non-stick cooking spray then place the pie crust into the pie plate. 2. Thoroughly drain the spinach removing as much liquid as possible. 3. Mix together the spinach eggs black pepper salt red pepper flakes and oregano. 4. Pour the spinach and egg mixture into the pie crust. 5. Chop up the feta and add to the top of the quiche. 6. Slice the tomato into pieces that are just thinner than a 1/4 thick. Evenly place 8 slices in a circle around the quiche and place 1 slice in the center. 7. Bake for 50 minutes. Turn off the oven and let sit for another 15-20 minutes or until set in the center.
