1/4 cup fresh citrus juice (lime, lemon, or orange)
1 tbsp cilantro, minced
1 tsp plus 1 tsp ground cumin
1/2 tsp hot sauce
3 cloves garlic, crushed
2 tbsp ground coriander
2 tsp black pepper
1 tsp paprika
1/4 tsp garlic powder
1/4 tsp salt
Instructions
Prepare marinade- combine juice, cilantro, 1 tsp cumin, hot sauce, and garlic in a large zip top bag. Add fish to bag. Seal and marinate in fridge 45 minutes.
Remove fish and discard marinade.
For spice rub- combine coriander, pepper, 1 tsp cumin, paprika, garlic powder, and salt. Rub over fish to coat.
Heat oil in a large nonstick skillet over medium heat. Add fish. Cook 6 minutes on each side or until fish flakes easily when tested with a fork.
