     Sunnybrook Inn's Hummingbird Cake

Ingredients
3 cups flour
2 cups sugar
1 tsp salt
1tsp baking soda
1 tsp cinnamon
1 cup oil
3 eggs
8 oz can crushed pineapple, w/juice
2 cups chopped ripe banana
 
1 cup chopped pecans
1 tsp vanilla
Cream Cheese Icing
8 oz cream cheese
1 stick butter
5 1/2 cups confectioners sugar

Instructions
Sift together dry ingredients- flour, sugar, salt, baking soda and cinnamon.
Fold in oil and eggs, stir in pineapple, bananas, pecans, and vanilla
Grease and flour 3 nine inch cake pans and fill 1/3 full.Bake at 350 for 20-25 minutes. Let cool.
Cream Cheese Icing- Beat cream cheese, butter and sugar. Spread icing between layers, on top and sides.
