Cook onions in oil until tender. add garlic, and cook for 2
minutes. Stir in beans, zucchini, Sweet potato, water, broth,
tomato paste, and dry spices. Bring to a boil, simmer,
reduce heat to simmer. Cover and cook for 5 minutes.
Stir in the quinoa. Return to boiling, reduce heat. Simmer
uncovered for 20-25 minutes, or until quinoa and potatoes
are tender. Season to taste with salt and pepper.
Serve topped with yogurt and cilantro.
