     Kibbee (Lebanese Meat Loaf)

Ingredients
1 lb. sirloin steak, finely ground at least twice
1 onion, finely grated
1 cup cracked wheat
1 1/2 tsp salt
1/2 tsp black pepper
ice water in bowl
Filling-
1/2 lb ground chuck (coarsley ground)
1 onion, finely grated
 
1/4 cup pine nuts
salt and pepper to taste
Top with-
1 stick unsalted butter

Instructions
Soak cracked wheat 20 minutes. Combine ground sirloin and one onion. Squeeze all water from wheat and add to meat mixture. Add seasonings. Combine well. Taste to see if more seasoning needed. Press half of meat mixture into bottom of 8x8 or 9x9 pan greased with some of butter. Use ice water and hands to smooth mixture until flat.
Brown ground chuck, onion, and pine nuts with seasonings. Drain off grease. Spread onto meat mixture in Pan.
Cover with remaining meat mixture, smoothing with ice water. Cut into small diamond shapes with sharp knife. Punch hole into each peace with knife (all the way to the bottom); Make hole incenter of pan with finger. Cut butter into pieces over entire pan. Bake 375 degrees at 25 minutes or until brown. Drain off excess butter.
