     Spice Crusted Salmon

Ingredients
1/4 cup peeled and coarsley chopped fresh ginger
2 Tbsp sesame seeds
2 Tbsp coriander seeds
1 Tbsp cumin seeds
1 Tbsp fennel seeds
1/2 tsp crushed red pepper flakes
1 clover garlic, peeled
3 Tbsp extra virgin olive oil; more for oiling the salmon
One 2 1/2 lb skin on salmon filet (or 2 1 lbs filets)
 
Kosher salt

Instructions
Preheat to 450 degrees Combine the ginger, sesame seeds, coriander seeds, cumin seeds, fennel seeds, red pepper, and garlic in a food processor and process until the mixture is finely chopped, about 30 seconds. With the motor running drizzle the oil through the feed tube and process, stopping to scrape down the sides, until the mixture forms a paste, about 20 seconds
Rub oil on the salmon skin and put the salmon, skin down, on a rack set on a rimmed baking sheet. Sprinkle 2 tsp salt evenly over the salmon. Using your hands, spread the spice paste over the salmon. Roast until the salmon is cooked to your liking, 16-18 min. for medium rare.
