Grease 9 inch round cake pan with butter and preheat oven on convection setting @ 325F.
In large mixing bowl, combine dry ingredients- flour, baking powder, sugar, baking soda, salt.
In medium mixing bowl, combine buttermilk and beaten egg and whisk to combine.
Pour wet ingredients into dry mixture and stir until just moistened. Pour in melted butter and mix until just combined, being careful not to over mix. Add raisins at this stage if using.
Pour batter into buttered cake pan (will be soft and sticky). Let batter sit at room temperature 30 min. to allow leavening to activate.
Bake for 40- 50 minutes, or until toothpick inserted into center comes out clean. Cool completely and cover with foil overnight for best texture.
