     Meatloaf Cupcakes

Ingredients
1 lb Ground Beef
3/4 Cup Quick Cooking Oats
1 Onion Soup Mix
1 Egg
Carrot
Mushrooms
Green Pepper
Onions
 
1 1/2 lbs Yukon Gold Potatoes
1/2 tsp Salt
4 Tbsp Heavy Cream
2 Tbsp Butter
1 Tbsp Milk
Salt and Pepper

Instructions
Start with chopping veggies with a food processor. Add the mixture to the ground beef. Mix well. Press the patties into a muffin pan. Bake at 400 degrees for 30 minutes or until your cupcakes are cooked through.
For Potato Frosting Boil Potatoes. Drain Water. Add cream and butter to drained potatoes. Beat potatoes and add milk until potatoes are at desired consistency. Add potatoes to a piping bag, or sandwich baggie with the corner snipped, and pipe onto the meatloaf cupcake. Garnish with corn or bacon bits for sprinkles or gravy.
