     Sweet Potato Sheppard's Pie

Ingredients
1 c dry lentils
3 o 4 med sweet potatoes peeled and cubed
5 carrots
2 lg onions chopped
2 cloves minced garlic
1/4 c veg broth
2 c fresh green beans trimmed and cut in 1 inch pcs
2 tsp tamari
1 tsp dried thyme
 
1/2 tsp sea salt
1/4 tsp black pepper
1/2 c unsweetened rice milk

Instructions
combine the lentils with 2 c water. Bring to a boil and reduce heat and simmer for 15 min or so thill tender. Cover and keep warm.
Put sweet potatoes in pot with water and cook till tender. Mash with rice milk.
In lg frying pan put veg broth carrots onion and garlic sauteing till carrots soften. Add beans and cook for 5 min. Add cooked lentils and seasonings. Stir well to combine.
Pour lentil mixture into a 10 cup casserole dish. Top with sweet potato mixture and bake in a 350 oven for 30 min.
