Combine milk and vinegar and let curdle while
mixing other ingredients.
In a large bowl, whisk to combine the whole wheat
flour, baking soda, baking powder, and salt. Set
aside.
In another bowl, melt butter, then whisk in eggs
and milk until fairly homogeneous. Mix wet into dry
ingredients and stir until just barely mixed.
Preheat griddle, or cooking surface, to 375 and
grease. Add 1/4 cup (or less) of batter and cook
until bubbles form on the top of the pancake. Turn
over and cook for about a minute or two more.
NOTE- You can substitute maple syrup or honey for
the sugar and coconut oil for the butter. Adding a
little flax seed meal and wheat germ adds an extra
bonus, too.
