     Oven Roasted Potatoes

Ingredients
6 lg Potatoes peeled and diced evenly
4 tbsp Olive Oil
1 tbsp minced garlic
1/2 tsp dried basil
1/2 tsp dried thyme
1/2 tsp dried oregano
1/2 tsp dried parsley
1/2 tsp crushed red pepper flakes
2/3 tsp salt
 
2 tbsp Louisiana Cajun Gumbo Mix
3 tbsp parmesan cheese

Instructions
Mix all ingredients herbs, oil and Gumbo mix in large bowl. Toss in potatoes stirring to coat well. Pour onto 9 x 13 baking pan lined in aluminum foil and sprayed with butter spray. Spread evenly, place in 425 oven for 20 minutes. Sprinkle with parmesan cheese and toss in pan return to oven bake 15 minutes turn heat to 450 bake 10 minutes. Separate potatoes from foil with spatula. Will be just crispy enough on outside and tender on the inside.
Serving Suggestions
Serve warm. But if necesary (probably not), refrigerate left overs even better heated up the next day!
