Ingredients
2 c white or yellow cornmeal
1 t kosher salt
1 t baking soda
1 C buttermilk
1 large egg, ligtly beaten
1/4 c canola oil
1 green onion, thinly sliced
 

Instructions
Stir together all dry ingredients in a bowl. In another bowl, stir together buttermilk, egg, and 2 T oil. Add liquid to dry ingredients and stir until just blended. Stir in green onion.
Brush 1 T oil on to hot griddle. Drop cornmeal mixture by 1/8 cup-fulls onto hot griddle. Flatten to 1/2 inch thick, and cook 1 1/2 to 2 minutes each side until golden. yield about 20 corncakes
