     Chicken Tortilla Soup

Ingredients
1-2 T olive oil
1/2 onion
4oz can of green chillies
1/2 t garlic powder
1-14.5 oz can diced tomatoes
2 cans of chicken broth
2 cups water- can water from cooking the chicken
2 chicken bullion cubes
1/2 t cumin
 
1T dried cillantro or 1/4c fresh
16 oz cooked chicken or about 1/3 of a whole cooked chicken
8-10 corn tortillas cut into strips
Montery Jack or cheddar cheese for topping

Instructions
First you brown the onions in oil till tender. Then add the chilies, garlic, and tomatoes and stir around a couple of minutes. Then add your chicken broth choice and the seasoning. Add the chicken and let it simmer for a while. When you like the way it tastes and how it looks then add the strips of tortilla and simmer a short time more. Your really just letting them soak up the soup and soften slightly. Then ladle in bowls and sprinkle with cheese. If you were taking it somewhere, I would wait till you get there and have reheated it before adding the tortilla strips. Otherwise they just melt into the soup.
