Beat well eggs and sugar till light and fluffy - beat in oil - add
vanilla, and buttermilk and beat for 1 minute.
Beat in sifted flour. Beat for 2 mins.
Bake for 30-50 mins
To make the buttermilk you need 1 cup milk and 1tbs white vinegar (or
lemon juice).
Just pour the vinegar (or lemon) in the milk and leave to sit for
10mins. Do not stir - it will curdle.
